roasted pumpkin seeds (totally off topic, but you’ll thank me later).

Halloween is over. What does that mean? Means its time to dissect those pumpkins and milk all that internal goodness out of those orange gourds. Today I roasted my pumpkin seeds and they turned out so yummy I wanted to share the recipe with you.

Roasted Pumpkin Seeds

Wash and dry seeds completely. When they are dry, toss with a small amount of vegetable oil and salt in a bowl. Make sure they are evenly coated.

Spread seeds on a baking sheet and sprinkle with any combination of the following: cinnamon, paprika, chili powder, sugar. (I used cinnamon and paprika for my first batch, but I think I will try cinnamon, sugar and chili powder for a hot/sweet flavor next time).

Bake at 300 degrees for 45 minutes. Let cool. Enjoy!
